This recipe was a huge hit! Even though we were super busy last weekend, we had time to throw this into the crockpot and have dinners ready for Saturday, Sunday and Monday! Seriously – it took me about 20 mins from start to finish and all our dinners were ready for the weekend.
Even though it says ‘lighter’, it is SUPER filling! Each serving is 1 cup of chilli and I had about 1.5 servings for dinner. Each serving is 4 SmartPoints on Weight Watchers, which makes it a great dinner choice!
Ingredients

2 pound(s) 93% lean ground turkey

2 cup(s) reduced sodium vegetable broth

2 1⁄2 cup(s) no salt added diced tomatoes

2 cup(s) uncooked celery, diced

1 cup(s) uncooked carrot(s), diced

2 cup(s) canned kidney beans

2 spray(s) cooking spray

1 small can Tomato Paste
Process
Start by dicing all the veggies and cooking the canned kidney beans. Cook the ground turkey until fully cooked. Mix all ingredients into the crock pot. If you have a smaller crockpot (like us) either use two or only use 1 cup of broth.
Cook for 10 HRS LOW or 6 HRS HIGH.
Makes 12 servings.
