It may be 30 degrees out today but it’s fall and that means time for pumpkin-everything! Just kidding, the pumpkin craze is ridiculous. Do you really need to smell like a pumpkin? What you do need to smell is this pumpkin loaf – it is amazing. Made with pear sauce instead of sugar, it’s a healthier treat for the fall! And each slice is only 5 SmartPoints, which is pretty good for cake.

Ingredients 

  • large egg(s)
  • cup(s) cooked pumpkin, mashed
  • 1cup(s) coconut oil
  • 1cup(s) all-purpose flour
  • tsp baking powder
  • tsp baking soda
  • tsp ground cinnamon
  • 1cup(s) chopped walnuts
  • cup(s) Pear Sauce 

Process

Beat eggs, oil, pumpkin, and pear sauce together. Add dry ingredients and mix. Pour into a greased loaf pan. Sprinkle walnuts on top of the loaf. Bake at 350F for 1 hour.

PS. This is a great base for French Toast – just use it as you would use normal bread!
